"It's fun, it's transportable, and above all it's tasty and each year we bring Sydney the latest in food-on-a-stick innovations," Mr McGrath said.
The trend reflects an appetite for anything skewered and stabbed with wood and steel seen at pop-up restaurants and cafes in Sydney.
"We do markets all over Australia but Sydney is definitely the biggest consumer of skewers," Hoy Pinoy owner James Meehan, the owner of a restaurant that sells pork belly cooked over coals at Sydney markets, told the Good Food Guide last year.
Mr McGrath said show management realised how popular food on a stick was during a trip to the US state fairs seven years ago, and had been "challenging our food operators to top this ever since".
There was now fierce competition to develop the next smash hit.
"This year we put the call out for something new and original and 'Lasagne on a Stick' was born.
"It's already proven to be a hit with our crowds ... and we're on track to sell 10,000 before the show wraps on 19 April."
Ranging from the very sweet to deep-fried goodness, food on a stick can last you through the day.
